Method:
1 Preheat oven 200°C fan-forced.
2 Combine sesame seeds and salmon on a plate, season with salt and pepper and turn to coat.  Heat oil in a frying pan over medium-high heat, add salmon and cook for 2 minutes each side until golden, transfer pan to oven and cook for 5-6 minutes, for medium rare or until cooked to your liking. 
3 Heat oil in a frying pan over medium heat, add eggplant and cook for 3 minutes, turning or until eggplant crisps a little, add chilli, chives, soy sauce, mirin and sesame oil and cook for 1 minute. 
4 Spoon eggplant mixture on a plate, top with salmon and serve scattered with chives.
