Method:
1 Heat oil in a large frying pan over medium-high heat, add mushrooms and lamb, season with salt and pepper and cook for 4-5 minutes each side or until mushrooms are tender and lamb is cooked to your liking.
2 Heat olive oil in a frying pan over a medium heat add the potatoes and cook for 6-8 minutes or until golden, drain and season with salt.
3 To serve, place one mushroom on a serving plate and top with the lamb, tomato slices and parsley leaves, sandwich together with the remaining mushroom and serve with chips
