Method:
1 Preheat the oven to 200°C fan forced.
2 Heat oil in a frying pan over high heat, cook pork for 3 minutes turning or until seared. Add the lemon slices and apple juice and bring to the boil. Transfer pan to the oven, cook for 5-8 minutes or until pork is just cooked through. Transfer pork to a board, cover and rest for 3 minutes. Reserve the pan juices.
3 Heat a char-grill pan over high heat, add capsicum, red onion, herbs and garlic, drizzled with olive oil and cook for 6-8 minutes, turning until charred and tender.
4 Add the lettuce to the warm pan juices, stand 1 minute or until they begin to wilt.
5 Slice the pork, and arrange on a plate. Serve with the capsicum, onion, garlic, lemon slices and wilted lettuce leaves. Spoon over pan juices. Serve
