Method:
1 Place the sultanas in a frying pan, add the apple juice and brandy and place over a medium heat, bring to a simmer, simmer 3 minutes.
2 Whip the cream to soft peaks.
3 Spoon the sultanas into the base of a serving glass, pour over the apple juice and top with cream to serve with a mint sprig if desired.
