Method:
1 Preheat oven 200°C fan-forced.
2 Place mushroom and garlic on a baking paper-lined oven tray and drizzle with oil and roast in oven for 8-10 minutes or until mushrooms are tender.
3 Heat oil in a frying pan over medium-high heat, add salmon and cook, skin side down for 3-4 minutes until golden, turn and cook a further 1-2 minutes for medium rare, or until cooked to your liking.  Remove to a plate and flake the salmon.
4 Arrange rocket, onion, tomato, thyme and salmon in a shallow bowl, drizzle over lemon juice and olive oil, season with salt and pepper and serve
