Method:
1 Preheat oven 200°C fan-forced.
2 Heat a char grill pan over medium heat, brush sourdough with a little oil and char grill for 1-2 minutes each side or until toasted.
3 Combine mayonnaise, garlic and basil in a bowl, season with salt and pepper.
4 Heat oil in a frying pan over medium heat, add bacon and cook for 4-5 minutes or until bacon is crispy. Remove to a plate. Heat a little more oil in a frying pan over medium-high heat, add salmon, season with salt and pepper and cook for 1-2 minutes each side or until sealed, transfer pan to the oven and cook for 6-8 minutes for medium, or until cooked to your liking.
5 Place 1 sourdough slice on a plate, top with rocket, bacon, salmon, basil aioli and parmesan cheese, sandwich together with remaining sourdough, slice and serve
