Method:
1 Using a mortar and pestle pound the chilli, sesame oil, fish sauce, lime juice, ginger, herbs and sugar to a paste.
2 Place the paste in a saucepan and cook, stirring for 1 minute, add the stock and bring to a simmer, add chicken strips and poach for 4-5 minutes or until chicken is cooked through.
3 Place the vermicelli noodles in a bowl, pour over boiling water and soak for 2-3 minutes or until softened, drain.
4 Arrange the noodles in a bowl and ladle over the chicken mixture, top with coriander and chilli to serve.
