Method:
1 Pour oil into a medium saucepan until one-third full. Heat over medium-high heat until hot.
2 Place the capsicum over a gas flame and cook turning until charred all over, when cool enough to handle peel, seed and dice. Place capsicum in a bowl, add vinegar, sugar and basil leaves and drizzle with olive oil, season with salt and pepper.
3 Place sweet chilli in a bowl, add prawns and toss to coat. Deep-fry prawns, , for 3- 4 minutes or until light golden.
4 Arrange the prawns on a serving plate with sweet and sour capsicum to the side to serve.
