Method:
1 Heat oil in a frying pan over medium-high heat. Add chicken and garlic, cook for 2-3 minutes or until chicken is sealed.
2 Add stock, saffron, turmeric, beans and pasatta and bring to the boil. Reduce heat to medium and cook for 10 minutes or until chicken is cooked through.
3 Stir through parsley and season with salt and pepper. Spoon onto a plate, top with mint if desired. Serve.
