Method:
1 Place the prawns into a small bowl, spoon over 1 tbs laska paste and stir to coat.
2 Heat oil in a char-grill pan over high heat, cook the prawns for 2-3 minutes on each side or until just cooked through.
3 Pour oil into a medium saucepan until one-third full. Heat over medium-high heat until hot. Deep-fry the noodles for 1-2 minutes until puffed. Remove with a slotted spoon, drain on paper towel.
4 Combine the remaining laska paste, red onion, chilli, brown sugar and lime juice in a small bowl.
5 Plate the noodles, top with the prawns, drizzle over the dressing and top with coriander and serve with lime wedges.
