Method:
1 Preheat the oven to 200°C fan forced.
2 Heat a frying pan over medium heat, cook bacon, onion and garlic for 3-4 minutes or until bacon is crisp and onion is soft.
3 Combine the flour, sour cream, egg, milk and parsley in a bowl. Add the bacon mixture and season with salt and pepper, mix lightly until just combined.
4 Lightly grease a mini muffin pan with spray oil, two-thirds fill with muffin mixture. Bake for 10 minutes or until a skewer inserted into the centre comes out clean. Cool 5 minutes in pan then turn out. Serve topped with a little sour cream and long chives.
