Method:
1 Preheat the oven to 200°C fan forced.
2 Heat oil in a frying pan over medium heat, add the mushroom, parsley and garlic, season and sauté for 2-3 minutes until tender. Transfer into a blender and blend until smooth, stir in the hazelnut meal and a drizzle of olive oil, season with salt and pepper.
3 Lay the chicken on a chopping board and spread the mixture on top and roll up to secure.
4 Heat oil in a frying pan over a medium heat, add the chicken and cook for 2-3 minutes until seared all over. Transfer the pan in the oven and cook for 6-8 minutes or until cooked through. Slice chicken to serve
