Method:
1 Combine garlic and butter in a small bowl, set aside. 
2 Blanch broccolini in salted boiling water for 1 minute, refresh under cold water, drain.
3 Heat oil in a frying pan over medium-high heat, add garlic butter, qukes and squid and cook for 1 minute stirring.  Add broccolini, mayonnaise, roasted capsicum and spinach and cook until spinach wilts. Serve
