Method:
1 Preheat oven 200°C fan-forced.
2 Thinly slice the zucchini with a mandolin. Place zucchini on a board and sprinkle with salt, set aside for 5 minutes.
3 Heat oil in a frying pan over medium-high heat add chicken and cook for 2 minutes each side or until browned, season with salt and pepper. Transfer the chicken to a chopping board. Wrap the zucchini evenly around the chicken.  Transfer chicken to a baking paper-lined oven tray and roast for 8-10 minutes or until chicken is cooked through.
4 Combine tomato, basil and snow pea sprouts in a bowl, drizzle with olive oil and season with salt and pepper.
5 Place chicken on a serving plate, serve tomato, basil and sprout salad to the side.
