Method:
1 Remove the meat from the bone, discard the skin and bones and shred the meat. Heat oil a frying pan over medium heat, add the duck and cook until crispy.
2 Heat another frying pan over a medium heat, toast the pancakes 1 minute each side to warm through. Slide onto a board.
3 Top pancakes with duck, cucumber and green onions and roll to enclose. Serve with hoisin sauce.
