Method:
1 Preheat the oven to 200°C fan forced.
2 Place the mushrooms in a frying pan. Drizzle with olive oil, season with salt and pepper, cook for 5-6 minutes or until tender. Cool
3 Cut the pastry into two, 18cm rounds, cut a round circle from the centre of one round and discard, place the pastry border onto the remaining pastry round. Place on a tray lined with baking paper and bake for 6-8 minutes until light golden.
4 Place the mushrooms, onto the pastry, sprinkle with the mozzarella and season with salt and pepper. Drizzle with olive oil and return to the oven, bake for 5 minutes or until cheese is melted and pastry golden. Serve immediately.
