Method:
1 Preheat the oven to 200°C fan forced.
2 Heat oil in a frying pan over medium heat, cook garlic, onion, chilli and pork for 4-5 minutes until pork is seared. Add beans and tomatoes, season with salt and pepper and simmer for 3-4 minutes. Transfer to an individual ovenproof baking dish.
3 Combine the breadcrumbs, butter and parsley in a small bowl. Scatter over pork and place in the oven, bake for 8-10 minutes or until top is golden.
4 Place rocket in a small bowl and drizzle with olive oil, season with salt and pepper. Serve with bean and pork gratin
