Method:
1 Heat oil in a frying pan over medium heat, add capsicums, red onion, and rosemary, cook until capsicums collapse. Add cabbage and balsamic vinegar, cook until just wilted.
2 Heat oil in a frying pan, over medium heat, layer potato slices, overlapping slightly, to form a circle. Brush with butter. Cook potatoes 3-4 minutes each side or until golden and tender.
3 Spoon capsicums and cabbage onto plate, top with potato galette, season with salt and pepper. Serve
