Method:
1 Preheat the oven to 200°C fan forced.
2 Combine the almond, sugar, egg yolk and vincotto to make a paste.
3 Lay 1 sheet of fillo pastry on a flat work surface. Brush with a little butter. Place another sheet of fillo on top and brush with butter. Spoon half the mixture into the centre of fillo, fold the edges in and roll into parcels. Repeat with remaining ingredients to make a second pastry.
4 Brush pastries with remaining butter. Place onto a lined baking tray. Bake for 8-10 minutes or until golden and crisp. Dust with icing sugar to serve.
Note The word vincotto translates to ‘cooked wine’. It’s a little sweeter and thicker than traditional vinegar. Available from specialty food outlets
