Method:
1 Using an electric beater whip the cream, sugar and vanilla together until firm, fold in three-quarters of the strawberries.
2 Dip one biscuit into the brandy. Spread 1 side of biscuit with a dollop of strawberry cream. Stand upright on plate. Repeat with remaining biscuits, brandy and strawberry cream, sandwich together to form a log. Spread remaining cream over log.
3 Top with remaining strawberries and sprinkle with grated chocolate. Refrigerate for 1 hour to allow biscuits to soften if time permits.
