Method:
1 Preheat the oven to 200°C fan-forced.
2 Cut the pastry into two rounds. Place on a baking tray and bake for 6-8 minutes or until golden and puffed.
3 Combine the goats curd and the herbs in a small bowl.
4 Spread the goats curd onto the cooked pastry, top with tomato, drizzle with olive oil, season with salt and pepper. Top with basil leaves to serve if desired.
