Method:
1 Preheat the oven to 200 °C fan-forced.
2 Cut the tops from capsicums and using a teaspoon carefully remove the seeds.
3 Place capsicums with lids on a baking paper-lined oven tray, drizzle with olive oil, season with salt and pepper, roast for 4-6 minutes or until tender.
4 Heat oil in a frying pan over medium heat, cook zucchini, peas, onion and chorizo for 3-4 minutes until tender. Add rice and cook until well combined, season to taste.
5 Arrange the capsicums on a plate, fill with the rice mixture, place the tops on to serve.
