Method:
1 Preheat oven 200°C fan forced.
2 Place passionfruit pulp and cornflour in a small saucepan over medium heat. Cook for 4-5 minutes or until mixture thickens. Set aside to cool.
3 Using an electric mixer beat egg whites until soft peaks form. Gradually add sugar, 1 tbs at a time, beating constantly until thick and glossy. Carefully fold passionfruit mixture into egg white mixture.
4 Place passionfriut shells on a lined baking tray. Spoon passionfruit mixture into shells. Transfer to oven, bake for 6 minutes or until souffles rise and are golden. Dust with icing sugar and serve immediately
