Method:
1 Preheat the oven to 160°C fan forced. Line a baking tray with baking paper.
2 Combine melted butter, egg and 1 tsp of the vanilla bean paste in a bowl.
3 Combine the sugar, flour and chocolate chips in a large bowl, add the melted butter mixture and stir to form a stiff dough.
4 Drop tablespoons of mixture onto tray, bake for 8-10 minutes or until golden.
5 Whisk cream and remaining vanilla bean paste in a bowl to soft peaks.
6 Pile the cookies on a plate, serve with a bowl of vanilla cream.
