Method:
1 Combine onion, garlic, mince, mustard and herbs in a bowl, season with salt and pepper. Shape into small  rissoles.
2 Heat oil in a frying pan over medium heat, cook the rissoles for 5-6 minutes turning until golden and cooked through.
3 Combine the rocket, tomato and lemon juice in a bowl, drizzle with olive oil and season with salt and pepper, toss to combine. Arrange on serving plate, top with rissoles, garnish with chives to serve.
