Method:
1 Melt 2 tsp butter in a frying pan over medium heat, add leeks, cook for 3-4 minutes or until leeks are softened. Add cream and spinach, cook for 2-3 minutes or until spinach wilts. Add salt and pepper to taste.
2 Rub fish with a little olive oil and season with salt and pepper. Heat remaining butter in a frying pan over high heat, add fish and cook for 2-3 minutes on each side, or until cooked through.
3 Place egg ring onto a serving plate to use as a mould. Spoon leek mixture into mould. Carefully remove mould and top with the fish. Serve.
