Method:
1 Season the duck breast with salt and pepper. Place skin down in a frying pan over a medium-low heat, cook for 5-6 minutes to let the fat render out. Increase heat, turn the duck and cook for a further 4-5 minutes for medium or until cooked to your liking. Rest then slice.
2 Grate the rind and juice 1 orange. Peel and segment the remaining orange. Combine the pistachio nuts, and orange rind and juice in a blender and blend until smooth, pour in olive oil and blend to form a dressing
3 Combine the snow peas, orange segments and onion in a bowl. Top with the sliced duck, drizzle over the dressing to serve
