Method:
1 Cook potatoes in a saucepan of water over medium heat for 5 minutes or until tender.  Remove and thickly slice.
2 Heat oil in a frying pan over medium heat add bacon and cook for 2-3 minutes or until bacon browns a little, add olives, chicken stock, mustard and season with salt and pepper and cook for 4-5 minutes or until sauce reduces a little.
3 Combine potatoes, basil, parsley, onion, tomato and bacon mixture in a bowl.  Season with salt and pepper, toss gently and serve
