Method:
1 Heat oil in a frying pan over medium heat. Add egg, swirl pan to coat base and cook for 1-2 minutes or until set. Slide omelette onto a chopping board, roll and finely shred.
2 Heat a char-grill pan over high heat, brush both sides of tuna with oil, season with salt and pepper. Char-grill tuna for 1-2 minutes on each side for rare or until cooked to your liking. Remove and dice.
3 Heat oil in a frying pan over medium heat. Add chilli, garlic, ginger and onion, cook for 2-3 minutes or until onion softens. Add broccoli leaves, bean sprouts, tofu, cooking wine, and ketcap manis, cook, stirring for 1-2 minutes or until broccoli wilts, remove from heat and fold through tuna. Serve topped with coriander.
