Method:
1 Preheat the oven to 200°C fan forced.
2 Combine the hoisin, sesame oil, oyster sauce, soy sauce, honey, vinegar and food colouring in a bowl, add duck breast and turn to coat.
3 Heat a frying pan over low heat, cook the duck breast, skin side down for 3 minutes, increase the heat to medium cook 3 minutes until golden, turn and cook for 2-3 minutes until seared. Transfer the pan to the oven and cook for 6-8 minutes for medium or until cooked to your liking, set aside to rest for 5 minutes, then slice.
4 Heat oil in another frying pan over medium heat, cook mushrooms for 3-4 minutes or until tender, season with salt and pepper and stir through the parsley.
5 Arrange duck on a plate, top with the mushrooms to serve.
