Method:
1 Place cumin and mint in a bowl, add lamb, toss to coat. Thread lamb, capsicum and onion alternately onto skewers.
2 Heat a char-grill pan over high heat, drizzle the skewers with oil, char-grill for 5-8 minutes turning occasionally for medium or until cooked to your liking.
3 Cook rice according to packet directions
4 Spoon rice onto a serving plate, top with skewers and serve
