Method:
1 Preheat the oven to 200°C fan-forced.
2 Drizzle both sides of bread with olive oil, place on a baking tray and cook for 6-8 minutes or until toasted.
3 Combine tomato, red onion, eggplant, mint and olives in a bowl, season with salt and pepper and drizzle with olive oil.
4 Arrange the toast on a plate and top with the salsa to serve
