Method:
1 Heat oil in a frying pan over a medium heat, cook the sausages for 6-8 minutes, turning to brown all over.
2 Prepare couscous according to packet directions. Add the saffron and butter and drizzle in olive oil, season with salt and pepper. Stir with a fork to separate the grains.
3 Spoon the couscous onto a plate and top with the sausages, sprinkle with parsley to serve.
