Method:
1 Place potatoes on a microwave-safe plate. Cover and microwave on High/100% for 5-6 minutes or until tender, drain and return to the bowl. Add chicken stock and a drizzle of olive oil and lightly smash with a fork or potato masher. Season to taste.
2 Line a small bamboo steamer with baking paper and add fish and broccolini cover with the lid and place over a saucepan or wok of simmering water and steam for 8-10 minutes or until cooked through.
3 Place an egg ring mould on a serving plate, fill with the smashed potato and carefully remove the mould, top with the fish and serve with broccolini
