Method:
1 Process avocado, sour cream, lime juice and salt and pepper in a food processor until smooth.
2 Place figs, cut side up, on a tray and sprinkle with caster sugar, using a kitchen blow torch, caramelise the sugar, alternately grill under a hot grill.
3 Arrange figs on a serving plate, serve with avocado cream, cos and herbs.
