Method:
1 Heat a char-grill pan over medium heat, brush bugs with a little oil and season with salt and pepper. Char-grill bugs for 2-3 minutes each side, or until cooked through.
2 Combine onion, coriander, garlic, lime juice, tomatoes and 1 tbs olive oil in a bowl and season with salt and pepper.
3 Place baby cos on a plate, top with salsa and bugs to serve.
