Method:
1 Heat oil in a frying pan over medium heat, cook chicken, stirring for 3-4 minutes or until golden.
2 Season with salt and pepper, add spinach and balsamic vinegar, drizzle with olive oil, cook for a further 1-2 minutes or until spinach is wilted and chicken cooked through. Serve
