Method:
1 Cook berries and sugar in a saucepan over medium heat for 10-12 minutes or until a jam like.
2 Combine icing sugar, cocoa powder and enough hot water to form a thin icing.
3 Spread half the sponge squares with a little berry jam, sandwich together with remaining sponge squares. Coat in warm chocolate icing and then roll in coconut. Place on a wire rack to set. Transfer to a plate to serve.
