Method:
1 Combine sugar and ¼ cup water in a large frying pan and cook over medium heat for 2-3 minutes, or until sugar dissolves. Add apples and poach for 6-8 minutes or until apples are tender.
2 Heat condensed milk in a frying pan over medium heat for 5-6 minutes, or until milk caramelizes and turns a light golden caramel.
3 Whisk egg and cream in a bowl.  Melt butter in a frying pan over medium heat, dip the sponge in the egg mixture and add to hot pan, cook for 1-2 minutes on each side or until cake is light golden.
4 Place breakfast sponge on a plate, top with apples and pour over caramel to serve.
