Method:
1 Place potatoes into a heatproof microwave safe bowl, cover with damp paper towel and microwave on High/100% for 4-6 minutes or until just tender. Drain and crush with a fork or potato masher.
2 Place bacon between two layers of paper towel. Microwave on High/100%  for 1 minute. Set aside to cool, finely chop.
3 Add bacon and remaining ingredients to potato and season with salt and pepper to taste. Stir to combine.
4 Spoon mixture on plate and top with a dollop of sour cream to serve.
