Method:
1 Combine onion, tomatoes, celery, capsicum and chilli in a blender, blend until smooth. Add enough lemon juice to taste and drizzle with olive oil, season with salt and pepper.
2 Combine the breadcrumbs, garlic and parsley in a small bowl.
3 Spoon the gazpacho into bowls and top with the breadcrumb mixture, drizzle with olive oil to serve
