Method:
1 Heat oil in a frying pan over high heat. Cook steak, for 3 minutes each side for medium-rare or until cooked to your liking. Rest for 5 minutes, and slice.
2 Pour boiling water into a bowl, add watercress, blanch for 15 seconds or until wilted. Drain.
3 Combine watercress and cream in a blender, blend until smooth. Season with salt and pepper.
4 Heat butter in a frying pan over medium heat. Add almonds, cook for 4-5 minutes or until light golden.
5 Spoon watercress cream onto a plate, top with sliced steak and almond chips. Serve.
