Method:
1 Wrap the mozzarella in bacon and secure with toothpick. Heat a frying pan over medium heat, cook the mozzarella for 1-2 minutes each side or until the bacon is crisp.
2 Heat oil in a frying pan over medium heat, cook zucchini, eggplant, capsicum, onion, garlic and tomato for 3-4 minutes or until softened, season with salt and pepper, stir through the capers.
3 Plate the mozzarella with the caponata to serve
