Method:
1 Pour oil into a medium frying until one-third full. Heat over medium-high heat until hot.  Combine the custard and cinnamon in a bowl and set aside.
2 Combine the ricotta, orange rind, brown sugar, sultanas, walnuts and the egg in a bowl and mix well to combine. Drop spoonfuls of mixture into flour and turn to coat.
3 Deep-fry fritters in small batches, for 3- 4 minutes or until golden. Drain on a wire rack. Place onto a plate, dust with icing sugar and serve with custard.
