Method:
1 Heat a frying pan over medium heat, cook pine nuts, stirring for 2 minutes or until toasted and golden, transfer to a plate. Add bacon to same pan and cook over high heat for 1-2 minutes or until crisp.
2 Combine peaches, red onion, rocket and basil leaves in a bowl, add the pine nuts and bacon, drizzle with oil and season with salt and pepper, toss to combine.
3 Combine mayonnaise and herbs with a 1 tsp warm water in a bowl, season with salt and pepper.
4 Arrange salad on a serving plate and drizzle over the dressing to serve.
