Method:
1 Heat oil in a frying pan over medium heat, cook fish for 2-3 minutes on each side or until cooked through.
2 Heat oil in another frying pan over medium heat, add garlic, onion, chilli, ginger and tomatoes and cook, stirring for 1 minute. Add vinegar, paprika and coriander, cook for a further 5-8 minutes, season with salt and pepper.
3 Cook the couscous according to packet instructions, season with salt and stir in the butter.
4 Spoon couscous onto a serving plate, top with the fish. Spoon over the sauce and top with coriander if desired.
