Method:
1 Heat oil in a frying pan over medium heat, add pork and season with salt and pepper, cook for 6-8 minutes turning, for medium or until cooked to your liking. Transfer pork to a chopping board and rest for 5 minutes, then slice.
2 For the pear and chilli relish, heat oil in another frying pan over a medium heat, add the witlof, pears, red onion and cook, stirring, for 2 minutes. Add the spices, sugar white wine and white vinegar, bring to the boil, boil gently for 2-3 minutes or until reduced, season to taste.
3 Place the sliced pork on a serving plate and spoon over the pear and chilli relish and top with shaved parmesan to serve.
