Method:
1 Cook pasta according to packet directions.
2 For the pesto, heat a frying pan over medium heat, cook pine nuts for 2-3 minutes or until toasted. Process rocket, toasted pine nuts and garlic in a food processor until finely chopped. With the motor running, gradually add the oil in a thin, steady stream until combined.
3 Heat oil a frying pan over medium heat, cook bacon and pine nuts for 2 minutes or until crisp. Add pasta, rocket, ricotta and a dollop of pesto, season with salt and pepper and toss to combine. Serve
