Method:
1 Preheat the oven to 200°C fan-forced.
2 Place fennel on a baking paper-lined oven tray, drizzle with olive oil and season with salt and pepper. Roast for 6-8 minutes or until tender.
3 Combine the breadcrumbs, parmesan and parsley in a bowl, season with salt and pepper. Spoon over the fennel, return to the oven and roast for a further 2 minutes or until golden. Drizzle with olive oil to serve.
