Method:
1 Heat a char-grill pan over medium heat, brush zucchini with a little oil and char grill for 2-3 minutes each side or until zucchini is tender and golden.
2 Heat oil in a frying pan over medium heat, add prawns, garlic, lemon rind and parsley and cook, stirring, for 3-4 minutes or until prawns are cooked through.
3 Combine yoghurt and mint in a bowl.
4 Serve zucchini and prawns, scattered with parsley leaves and dill with minted yoghurt to the side.
